Classification
Frying pans with non-stick coating are divided into groups depending on the material of this coating.
There are five main types:
- marble;
- ceramic;
- Teflon;
What non-stick coating is on your frying pan? TeflonCeramics - titanium;
- diamond
There are other options, for example, enamel and tin, but they are less common on sale due to less practicality.
The inner coating of the frying pan also differs in the number of layers - it can be single-layer or multi-layer. With increasing layers, the service life of the cookware increases.
In order to deceive the buyer, some manufacturers replace the non-stick coating with non-stick paint. To determine the quality of cookware in a store, you can use a magnet. The reason is that the coating is applied to aluminum, and the paint is applied to steel. If the magnet works, it means the manufacturer used paint.
Types of non-stick coatings
To find out which frying pan with a modern non-stick coating is better, you first need to consider the materials used. Used: enamel, Teflon, ceramics, stone, titanium, nanocomposite.
Enamel is a glassy coating of metal, known long before the advent of non-stick frying pans. Teflon (polytetrafluoroethylene, or PTFE) is a fluorine-containing polymer with chemical properties similar to gold, silver, platinum and other noble metals. Many non-stick coatings are made using polytetrafluoroethylene.
Enamel is a glassy coating of metal, known long before the advent of non-stick frying pans.
The ceramic coating is applied in two ways: 1) roller rolling onto extruded aluminum; 2) spraying on cast aluminum. In the second case, we get pans that are more expensive, but of better quality.
Ceramic coating is applied in two ways.
Stone coating (granite, marble) is the same PTFE mixed with stone chips. The titanium composition is prepared on the basis of ceramics or Teflon. It can be applied by rolling or by a better method, plasma spraying.

Nanocomposite – ultra-strong non-stick coating of a new generation. The most famous is diamond, made from polytetrafluoroethylene to which diamond dust is added.

Each type of non-stick cookware requires special care. The general rule is the absence of high temperatures and sudden temperature changes. The cooking process begins with medium heat, which is gradually reduced.
With marble coating
Marble non-stick coating is Teflon with marble chips in its composition. Marble is durable and low susceptibility to mechanical damage. Marble-coated pans heat up quickly and cool down slowly. With sudden temperature changes, the surface becomes covered with microcracks.

How to choose a frying pan
Let's look at how to choose the models that housewives use most often.
Material of manufacture
When choosing a frying pan, first of all, you need to choose the right material from which it is made. Not only the quality of the prepared products depends on this, but also the comfort of the process itself, as well as the durability of the product. There are frying pans:
- Cast iron. They heat up slowly and evenly, so food is fried evenly over the entire area. The porous structure of cast iron absorbs oil, which virtually eliminates the possibility of food burning. A cast iron frying pan is durable, almost eternal. She is not afraid of sharp objects, metal spatulas, or knives. The disadvantage of the material is its noticeable weight.
- Aluminum. Lightweight, relatively cheap, heats up quickly. Available in forged, cast, extruded and anodized aluminum. The latter does not have the ability to oxidize, which is generally characteristic of this metal, so frying pans made of anodized aluminum are environmentally safe for health and serve for a long time. It is extremely important that the aluminum frying pan has a non-stick coating, since the metal itself does not have these properties, and is also easily scratched due to its inherent softness. However, aluminum frying pans make up the largest percentage of offerings on the market due to their versatility and balanced price.
- Steel. Food in metal or stainless steel cookware will burn, so it is recommended to buy frying pans with a double bottom and thick walls. The advantage of such a product is that it preserves the color and taste of the products, it is not susceptible to corrosion, and is not afraid of sharp objects.
IMPORTANT!
It is more convenient to simmer in a stainless steel pan than to fry. You won’t have to stand at the stove and constantly stir food, but you’ll hardly be able to fry a piece of delicious, juicy meat with a crispy crust on it.

Coating
When frying food, it is important what kind of coating the pan has. Non-stick has a clear advantage. With him:
- a minimum amount of oil is required for cooking;
- food does not burn, it does not need to be constantly stirred;
- The pan is easy to clean.
The most popular types of non-stick coating are:
- Teflon. Dishes with such a bottom are affordable and can be used to cook without fat. The main thing is not to overheat the product (heating ceiling is 200 degrees).
- Ceramic. This is a polymer coating with tiny sand particles. Such dishes can be heated up to 450 degrees, they are lightweight and heat up evenly. The downside is that you can’t cook on an induction hob.
- Marble. This means Teflon with marble chips. Unlike the two previous materials, it is more resistant to sharp objects and impacts, and cools down more slowly.
- Granite. Almost the same as marble, with similar properties, but less expressive texture and cheaper in price.
- Stone. A variation of the previous coating. It differs from it in a lighter crumb, but essentially has identical characteristics.
- Titanium. It has high strength and the same cost. The advantage is that you can use metal spatulas with it. Titanium is almost impossible to damage.
It is noteworthy that cast iron frying pans, as a rule, do not have an additional coating, since this material itself is already non-stick.
IMPORTANT!
The presence of a non-stick coating is not a 100% guarantee that food will not burn. It only reduces the risk of this possibility.
Having decided on the types of materials and coatings for frying pans, let’s now look at their purpose.

Regular (classic) frying pan
An ordinary classic frying pan has a common diameter of 24 - 28 cm and a wall height of 3 - 5 cm, but it can have other sizes. This type of cookware is called universal because it is equally suitable for frying and stewing foods.

Pancake pans
The difficulty in making pancakes lies in the very thin layer of dough. It should be fried without sticking to the bottom, and should easily turn over without bunching up. For successful baking of pancakes, modern industry produces special lightweight frying pans with a diameter of 18 - 25 cm and with a low side (1 - 1.5 cm), allowing you to easily turn over the baked goods. A lid is usually not needed.
When choosing a pan for pancakes, you need to pay special attention to the handle. When cooking, you often have to handle the frying pan, so the handle should be comfortable and not hot. The handle can be made of bakelite, a melt-resistant polymer, or wood.
IMPORTANT!
There are shaped pans for pancakes, but when choosing, it is better to give preference to the quality and convenience of the cookware rather than design.

Saucepan
A saucepan is a container that combines the functions of a frying pan and a saucepan. You can fry and stew meat, vegetables, prepare sauces and creams in it. A saucepan is needed when you want to preserve liquid until the end of cooking.
Sauté pans come in any material: cast iron, ceramic, aluminum or stainless steel, with or without non-stick coating. You definitely need to pay attention to the thickness of the bottom - the thicker it is, the more evenly the food heats up, and after cooking it cools down more slowly. It would be good if the surface was non-stick. The thicker the non-stick coating, the less you worry about your food burning.
It is more practical to choose a saucepan with two handles. One handle is made like a saucepan, and the second - like a frying pan. Two handles make it easy and convenient to operate the deep container.
It is also important to pay attention to what kind of lid the saucepan has. If it is not included in the kit, which is quite a common occurrence, it is better to buy a glass one with a metal rim that protects against chips. The transparency of the glass allows you to observe the process without opening the lid. Also, it must have a hole for steam to escape.
IMPORTANT!
There may be a heating temperature indicator on the lid of the saucepan. This option will be necessary for those who like to cook exactly according to the recipe.

brazier
A frying pan is a frying pan with a thick bottom and walls, two handles and a lid. A roasting pan can be called a kind of pan for cooking dishes on the stove and in the oven. It comes in form:
- oval;
- round;
- rectangular.
In oval and round models it is convenient to cook stews and roasts, and in rectangular models - meat loaves, poultry, large pieces of meat and other dishes.
When choosing the size of the fryer, you need to focus on the number of people. For 2 - 3 family members, dishes with a capacity of 2 liters are enough, and for a larger number - 4 - 5 liters.
Roasting pans are made from the same materials as sauté pans. Many models have a non-stick coating.
IMPORTANT!
The Dutch oven may have a rack. It is convenient to use when you need to remove excess fat from meat.

Grill
A grill is a frying pan with a ribbed bottom, which can have a round or square shape, one or two handles (like a saucepan). A grill pan is used to cook vegetables and meat on the stove. Streaks remain on the food, as if frying on a grill.
Benefits of grilling:
- no need to use oil;
- the fat flows into the grooves, so the meat is not stewed in its own juices, but fried without evenly touching the hot bottom over the entire area.
Characteristic features of a frying pan with grill effect:
- ribbed bottom;
- thick walls to create intense heat inside the container;
- lack of cover;
- non-stick coating.
There are grills with press lids. They are made of solid glass or metal in the shape of a frying pan to press the meat tightly to the bottom. This way the product releases its juice faster and cooks faster.
IMPORTANT!
Not all grill pans are suitable for all types of stoves, so you need to check the manufacturer's labeling. You can buy any frying pan for a gas stove.

Handle type and material
Depending on the purpose of the frying pan, the product is equipped with one or more handles. They can be integral with the body, being non-removable, or they can be attached to bolts or special hooks. The material of the handle can also be different: wood, metal, cast iron or bakelite, and is usually selected according to the material and weight of the frying pan. For lightweight aluminum or steel models, bakelite or metal is more often used; for cast iron, cast iron or wood, respectively.
IMPORTANT!
The handle, which is integral with the pan, is very durable. The removable handle may fall off or become loose over time, but, unlike a monolithic handle, it can be removed for cooking in the oven, and this feature also allows you to save space during storage.
Additional accessories and options
The ease of use of a frying pan is also influenced by the presence of additional features and accessories included in the set. For example: Teflon frying pans from Tefal are often equipped with a temperature sensor in the form of a red circle in the center of the bottom. When it starts to burn brightly, it means the pan is heated to the desired temperature.
It’s convenient when a regular frying pan comes with a lid and a spatula, a saucepan comes with an auxiliary handle, and a grill comes with a grate.
IMPORTANT:
Some frying pans may have an induction bottom, which allows them to be used on induction hobs.

When choosing, it is important to pay attention to the quality of the coating, equipment, weight, ease of grip of the handle and, of course, the price. A good frying pan can't be too cheap.
With ceramic
The ceramic non-stick coating is made from a nanocomposite polymer with sand nanoparticles and is distinguished by its durability. However, the strength does not extend to sudden temperature changes. The advantages of ceramics include long heat retention, ease of cleaning and the ability to cook with a minimum of oil.
Oursson Palette PF2422C

Kirill | Alexandra |
I bought a frying pan specifically for a new induction panel. The vessel surprised me by instantly heating up the food - something I’m not yet used to. Other advantages: excellent non-stick coating and removable handle. | The pan heats up evenly, does not burn and fries the meat perfectly even over low heat. The bottom can be easily washed with a regular sponge and soap. |
Cast iron
Cast iron frying pans are very heavy, but they are completely indestructible: they are not afraid of forks, metal spatulas, or even falls from a small height, since there is no coating as such. The disadvantages of cast iron include heavy weight (2-3 kg), hot handles and the need for special care. A cast iron frying pan needs to be heated with salt in the oven and greased with oil. Cast iron should never be washed in the dishwasher or soaked for a long time: the pan may rust.
Prices for cast iron frying pans start at 3,000 rubles, but really high-end brands cost more: for example, Le Creuset - from 14,000 rubles.
Titanium
Titanium is a nanocomposite coating, one of the best on the market. Titanium has properties similar to cast iron: safe, does not emit toxic substances, durable and allows you to cook without oil. Unlike cast iron, titanium frying pans are lightweight and resistant to rust, which is why titanium products are popular.
The main disadvantage of titanium frying pans is their high price and frequent counterfeits containing nickel, which releases when heated.
Biotan (BIOTAN)
Frying pans coated with biothane are produced by the Danish company Gastrolux. Gastrolux is a premium brand, and the cost of dishes starts from 8,000 rubles. Each product is assigned an individual number, so there are no fakes for this dish.
But such high quality is worth the money. Biotan is a high-tech mineral coating made from the remains of mollusk shells, applied to a die-cast aluminum base. Biotane does not contain PFOA and PFAS, and therefore is completely safe even at high temperatures.
The aluminum base heats up quickly and retains heat well, and is oven safe up to 315°C thanks to the patented removable handle. The pans are highly durable and wear-resistant.
The coating of Gastrolux frying pans is considered the most durable of all modern non-stick coatings, so it will fully recoup the investment - not only in terms of use, but also in health benefits.
With Teflon
Teflon non-stick coating is considered one of the most common - it is used to create aluminum cookware. Teflon has excellent non-stick properties, but is sensitive to metal kitchen accessories. The main disadvantage of Teflon is its limited shelf life (about a year).
Tefal Extra
The Extra series frying pan is protected by an innovative Extra coating, which extends the life of the cookware. A Thermo-spot heating indicator is provided to control the temperature. The included glass lid allows you to monitor the cooking process.

So far the best speed I've ever had. Compact, does not burn at all (even with a minimum of oil). There is only one drawback - if you put an empty frying pan on a gas stove, the handle will move. |
With titanium
Titanium non-stick coating is created on the basis of titanium oxide. Its multilayer structure is not hazardous to health and is impervious to metal accessories. The properties of titanium coating are similar to cast iron and have a long service life.
Rondell Mocco RDA-277
The Mocco RDA pan is resistant to metal spatulas thanks to its durable non-stick coating. To preserve the juiciness of the dish, there are microcells that cover the entire bottom of the dish. The roof is made of heat-resistant glass.

I bought a frying pan on the advice of a friend and did not regret the money spent. I have little experience with frying pans, but this was the first time I was able to cook scrambled eggs without any oil. To switch to proper nutrition, this is what you need. | The Teflon coating performs its tasks completely; it doesn’t even care about hard brushes. Food does not burn, the coating does not develop scratches even after a year of active use. |
Tefal Emotion
